Green Curry Hummus

1 15oz Can of Organic Eden Garbanzo Beans or 1 ½ cups of Organic Dried Garbanzo Beans

1 tsp. Chopped Garlic

3 tbsp Extra Virgin Olive Oil

½ cup Golden Raisins (soak in hot water for 5 minutes to soften them)

1 bunch of Lightly chopped Organic Cilantro

¼ cup freshly squeezed Lime Juice

1 to 2 tbsp. Curry powder

1 tbsp. Organic Dark Maple Syrup

1/16th tsp. Or a pinch of Cayenne Pepper (this is optional if you are not keen on spicy foods, but it really does add to the flavor.)

Directions:

  1. Using your food processor place your beans, garlic, olive oil, pre soaked golden raisins, cilantro, lime juice, curry powder, maple syrup and lastly your cayenne pepper if you like a little extra spice. Which I highly recommend.
  2. Turn on your food processor and blend for about 3 minutes or until all the ingredients are looking smooth and creamy.
  3. At this point if you want it to have a stronger curry flavor you can add another tbs. of curry powder. If you want a slightly lighter consistency you can add a little extra Olive oil and mix again in your blender.
  4. Now place in a pretty glass bowl. add a little olive oil and chopped cilantro to decorate, you can even place some slices of lime around the edge of your bowl to add a little more color and dimension.
