Lime Cilantro Vinaigrette

1 1/2 Cups of extra virgin olive oil

2 bunches of fresh Cilantro

½ Cup Freshly squeezed Lime juice

½ Cup Organic Dark Maple Syrup

1 Cup of water

1 medium Cloves of Garlic (optional)

Directions:

  1. Get your food blender out, (my favorite one is the Vita Mix, they are so strong and dependable they are a little on the pricey side but last forever I’ve had mine for 18 years}

  2. Now chop up your cilantro a little making sure you discard all the long storks at the end of the leafy greens (the storks can be a little bitter in the dressing)

  3. Now place the olive oil, lime juice, fresh , chopped cilantro, maple syrup, and water in the container, you can also add the garlic if you have decided to use it.

  4. Now blend it all together for at least 1 minute. The longer it is blended the belter the flavor.

  5. Now place the contents in a pretty storage jar/bottle and place in the fridge until you are ready to use.

  6. You can use this salad dressing on of course salads but it is also great on vegetables, stir-fry or the grill, it is also a great marinade for tempeh, tofu fish and chicken

  7. If you don’t want to make so much you can halve the recipe

  8. I keep this dressing in the fridge for about 2 weeks. If you add the garlic you may be able to keep it a little longer.
